When you have over-ripe bananas which you don’t want to waste, here is my quick and easy, no-fuss banana bread recipe…which is low on sugar and still yummy – well I think so 😉
2 med to large over ripe bananas
1 cup wholemeal flour
1/2 cup multi grain flour
1/2 cup x-virgin olive oil
2 tsp brown sugar
½ tsp vanilla powder or 1 tsp vanilla extract
1 tsp cinnamon powder
1/2 tsp nutmeg powder
2 tbsp sunflower seeds
1 tbsp linseeds
1.5 tsp baking powder
½ tsp baking soda
1/2 to 1tsp salt
preheat the oven to 180 degree celsius.
grease a bread tin or a rectangular cake pan with some oil
mash the bananas with a fork in your mixing bowl, add oil, sugar and spices and quickly blend in with the bananas using your fork
throw all the remaining ingredients into the mixing bowl and blend using dough hook (or by hand with spoon) for a couple of minutes, scraping dry stuff off the sides if needed
Pour and scrape the bread mixture into the cooking pan.
Bake at 180 Celcius for 35 minutes or till a toothpick inserted in the bread comes out clean.
Cool remove from pan and serve.
Idea – you could add some chopped walnuts too and use honey instead of sugar
