Vegetarian stir fry – quick, easy, tasty, healthy ….for camping

Chop an onion, a green and/or red capsicum, 1-2 chillies if you like them and some garlic or garlic stems

Throw a tablespoon or two of rice oil or sesame oil or other vegetable oil into a wok or frypan, heat on high with some mustard seeds, cumin seeds, dried chilli flakes if you have any of these handy….and stirfry for a couple of minutes.

Add whatever frozen or fresh cut vegetables you have handy – about 1 1/2 cups per person – for example last night I added frozen beans, peas, and spinach. Throw in a well rinsed can of chick peas or kidney beans or lentils.

Add some spices & herbs of your choice eg turmeric, curry, pepper, paprika, mixed herbs, garam masala

Stir fry for 5 to 7 mins at med heat.

Dish up and eat. Easy, tasty, healthy.

My husband and I finish up with some plain pot set yoghurt to cool the palate and help the tummy 🙂
